The name Santoku means "three virtues" (三徳包丁) in Japanese, as its versatile blade is ideal for chopping vegetables and fruit, slicing meat and preparing fish.

The Santoku’s thin blade enables precise, clean cuts without ever crushing the most delicate foods, preserving all their flavour.

HASHI - KOTAI’s new collection

Awaken your culinary creativity with KOTAI’s new Hashi knife collection (橋, bridge). Essential, accessible and designed for easy maintenance, this range embodies simplicity, ideal for passionate home cooks.

Made in Seki, Japan’s knife-making capital, world-renowned for its high-quality blades and the expertise of its blacksmiths for 800 years, each knife is a symbol of minimalist culinary craftsmanship, offering a cutting experience as refined as it is functional.

Inspired by its motto, “A bridge to go beyond”, the Hashi collection draws on the different forms taken by water and applies this allegory of “water adapting to its environment” to all its knives to highlight their versatility. It is therefore available in three distinct editions: Classic, Tsuchime and Damascus, each knife carefully designed to offer you a unique experience tailored to your different culinary needs.

Hashi Classic Range

The Hashi Classic range offers Japanese knives forged from molybdenum stainless steel, easy to sharpen and ergonomic for everyday home use.

Their simple, elegant and minimalist blade, paired with a black pakka wood (pakkawood) handle, represents an aerial view of a peaceful river reflecting a clear, cloudless sky.
