9 cm Paring Knife - Hashi Damascus Collection
The paring knife is the second most frequently used knife, just after the chef’s knife. It is extremely useful for precision tasks away from the chopping board. The paring knife can also be used to peel food.
The KOTAI paring knife has an ideal hybrid shape, combining an almost flat blade edge for maximum precision with a very fine tip for detailed work.

Hashi Damascus Range
The KOTAI Hashi Damascus range offers Japanese knives combining strength, reliability and long-lasting sharpness, featuring a black pakka wood (pakkawood) handle and stainless Damascus steel blades with exceptional HRC 61 hardness.
These Damascus blades feature patterns reminiscent of moving waves and water trails on the surface of a river. Thanks to its high carbon and cobalt content, MVS10Cob steel ensures long-lasting sharpness, but requires careful use and maintenance.
