Confiture Parisienne & À Paris, chez Antoinette Poisson revive the “Well of Love” in tribute to Louis XV’s favourite.
Antoinette Poisson was the real name of the Marquise de Pompadour, Louis XV’s favourite and beloved. He commissioned his finest pastry chefs to create the most delicious dessert they could for her: the “Well of Love”, a cake filled at its heart with the finest jam anyone could imagine at the time.
The recipe’s secret was closely guarded, and today the “Well of Love” is filled with pastry cream. Forgotten until now, Confiture Parisienne has unravelled the mystery and rediscovered the secret of this wonderful recipe, not revisited since the time of Louis XV. The pastry is reborn as a unique jam made with redcurrant jelly, raspberry and violet.
Although an unopened, commercially produced jam generally keeps for around two years at room temperature and away from light, not all jams contain the same ingredients. One ingredient plays a major role in how long jam keeps: the amount of sugar.
